Shaved Carrot, Apple and
Snap Pea Salad in Lettuce Cups



You’ll need:
4 large carrots, peeled
1 large apple
¾ cup sugar snap peas, ends trimmed and thinly
    sliced on the diagonal
¾ cup Hidden Valley® Original Ranch® Dressing
6 small iceberg or butter lettuce leaves, trimmed,
    if necessary, into cups

Instructions:
  1. Using the large holes on a box grater, shave the carrots.
  2. Core the apple and cut into thin slices, then cut slices into matchstick shapes.
  3. Toss the carrots, apples and snap peas together, then mix in ½ cup of Hidden Valley® Original Ranch® Dressing.
  4. Divide salad evenly into the lettuce cups, and drizzle the remaining ¼ cup of Hidden Valley® Original Ranch® Dressing over the tops.
  5. Pick up and eat lettuce cups out-of-hand like a taco, or serve on a plate with a fork and knife.

*For a heartier meal, add ½-¾ cup diced tofu or chicken to the salad before tossing with the dressing.
