Shaved Carrot, Apple and
Snap Pea Salad in Lettuce Cups
You’ll need:
4 large carrots, peeled1 large apple
¾ cup sugar snap peas, ends trimmed and thinly
sliced on the diagonal
¾ cup Hidden Valley® Original Ranch® Dressing
6 small iceberg or butter lettuce leaves, trimmed,
if necessary, into cups
Instructions:
- Using the large holes on a box grater, shave the carrots.
- Core the apple and cut into thin slices, then cut slices into matchstick shapes.
- Toss the carrots, apples and snap peas together, then mix in ½ cup of Hidden Valley® Original Ranch® Dressing.
- Divide salad evenly into the lettuce cups, and drizzle the remaining ¼ cup of Hidden Valley® Original Ranch® Dressing over the tops.
- Pick up and eat lettuce cups out-of-hand like a taco, or serve on a plate with a fork and knife.
*For a heartier meal, add ½-¾ cup diced tofu or chicken to the salad before tossing with the dressing.
